THE HISTORY

I grew up in a small coastal town in central California, in a house where my parents planted a dwarf apple tree, a dwarf plum tree, and dwarf roses because that's what fit the yard. Nothing about those trees turned out dwarf. They gave us buckets of fruit every year, more than one family could reasonably use. My sister and I would stand in the kitchen for hours peeling and slicing, bagging apples for the freezer, hand-delivering them to neighbors, turning the rest into applesauce, jam, and — my favorite — pie and cobbler, tossed in sugar and spice until the whole kitchen smelled like it. Apple Spice is that scent memory in a bottle: sun-warmed apples, spice, sweet vanilla, brown sugar. — Angela
