Sweet & Savory Roasted Brussels Sprouts

I absolutely love the way this dish brings together sweet and savory with the rich green brussels sprouts, the nutty pecans, salty prosciutto, and sticky-sweet Apple Spice syrup.

Ingredients

  • 1 pound of brussels sprouts cleaned, tops removed, and cut in half lengthwise

  • 1 red onion, diced or thinly sliced

  • 1.5 cups of pecan halves

  • 6 - 12 oz prosciutto

  • 3 tablespoons of avocado oil

  • 3 tablespoons of Apple Spice syrup

  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees F

  • Line a baking sheet with parchment paper or a silicone baking mat

  • Place the prosciutto on the baking mat, making sure not to overlap

  • Bake for 9 - 12 minutes, or until the slices begin to shrivel and turn golden

  • Remove from the oven and let cool on the pan for 5 - 10 minutes; the slices will continue to crisp as they cool

  • Once the slices are cool, remove them from the pan and set them aside

  • In a large bowl, toss your cut brussles sprouts, sliced onion, pecans, and avocado oil, and stir until everything is well incorporated

  • Pour the contents of your bowl onto the parchment-lined baking sheet and season to taste with salt and pepper

  • Roast the mixture in the oven for 20 - 25 minutes

  • While cooking, roughly chop the crisped prosciutto into bite-sized pieces

  • When removed from the oven, drizzle the brussels sprouts with the Apple Spice syrup and gently toss to incorporate

  • Move the mixture to a serving platter and top with the chopped crispy prosciutto
