Maple Mustard Glazed Carrots with Whipped Goat Cheese

Take your carrots to the next level with this absolutely delicious recipe! Don’t like goat cheese? Substitute the goat cheese in this recipe with a whipped fetta or mascarpone!

Ingredients: Roast Pan

  • 1 pound whole carrots, preferably with the green tops still on

  • 2 tbsp olive oil 

  • 2 tbsp Rich Aunty 

  • 1 tbsp dijon mustard 

  • Salt to taste 

Ingredients: Whipped Goat Cheese

  • 5oz goat cheese log, room temp 

  • ¾ cup greek yogurt

Ingredients: Toppings

  • 2 tsp Rich Aunty 

  • 2 tsp grain mustard 

  • 1 handful chopped pecans 

  • Carrot tops minced, or substitute with fresh parsley

Instructions

  • Preheat your oven to 400 degrees F.

  • In a small mixing bowl, combine the olive oil, maple syrup, Dijon mustard, and salt for the carrots

  • Add the carrots to a baking sheet and drizzle the Rich Aunty mustard sauce, turning the carrots to ensure they are well coated

  • Bake for about 20-23 minutes or until the carrots are fork tender.

  • While the carrots are roasting, make the whipped goat cheese by combining all the ingredients in a medium mixing bowl. Using a hand mixer, mix until it’s smooth and creamy. You can also blend everything in a food processor.

  • Next, mix the Rich Aunty and grain mustard, set aside

  • Add the whipped goat cheese to a serving plate. Top with the roasted carrots. Drizzle the Rich Aunty and grain mustard on top and garnish with the chopped pecans and minced carrot tops or parsley.
